Healthy Almond Joy Recipe
Sweetened with a bit of maple syrup, this healthy take on junk food will have you, well, full of joy!
First, mix the following into a sticky batter:
1.5 cups shredded or flaked organic unsweetened organic coconut
¼ cup solid organic coconut oil, melted
2 tablespoons organic maple syrup
I used a metal bread pan, and squished the mixture into an even layer across the bottom. Using the bottom of a flat drinking glass made it much easier to pack down the batter.
Pop that in the freezer for 10 minutes.
The coconut oil released from the metal pan very easy and I used a knife to cut strips. Lay the strips on a non-stick surface and place back in the freezer while you create the chocolate mixture by melting the following:
½ cup vegan / gluten free chocolate chips
1 Teaspoon solid organic coconut oil
Here are two options based on your presentation preferences (That’s just as important, right?)
The Almond Joy copycat:
Take the coconut bars out of the freezer and use the melted chocolate as a glue to attached the almonds. Put back in the freezer for a few minutes to make sure the almonds won’t fall off for the next part.
Once the almonds are secure, take a pair of tongs (trust me, the chocolate is sticky stuff) and fully submerge the almond coconut bars in the chocolate. Place back in the freezer to harden, on a non-stick surface.
The Artistic Almond Joy (as seen in the photos):
Take the coconut bars out of the freezer and use tongs to dip the bottom of each bar into the chocolate. Let the bars freeze for a few minutes again, resting with the chocolate side up.
You may need to reheat your chocolate, and use it as a glue to attach the almonds, and drizzle across the top of the bars.
Store in an airtight container in the refrigerator for a week, or the freezer for a month (just let them thaw for 15 minutes to soften).
